I feel so lucky to have grown up spending Thanksgiving with my dad’s side of the family. Coming in the front door of Gramma and Grammpa’s, you were immediately hit with the smell of turkey cooking, and when you came up the stairs, you were greeted by Grammpa in his recliner, and Gramma hard at work in the kitchen. I miss them terribly this time of year, so what better way to honor their memory by making a recipe inspired by them and the flavors of their holidays! This is a little bit of everything you love about Thanksgiving dinner but on a much smaller and not so filling scale. This recipe is perfect if you only have a short window between coming home from work and going to a party.
